Mould needs time more than it needs water. Humidity above roughly 60% for a few weeks is enough, and nothing looks wrong until it very much does.
There is no leak and no flood. A closed building through a humid August simply holds what comes in, and the wood, plaster and fabric slowly take it up.
Through a heated winter humidity can fall far enough to open joints in flooring, crack furniture and shrink trim. Same measurement, other end of the range.
